Foxes were, at that point, considered vermin--dangerous pests who made farmers' lives miserable. The poultry wasn't safe from them, and neither were the sheep. There are an awful lot of terriers out there whose ancestors were also bred to help farmers--gentry or not--with the problem. George may have enjoyed a hunt with his neighbors on a crisp fall morning, but his foxhound breeding program also had something to do with neighborhood pest control.
